Saturated fatty acids (SFAs) are a class of lipid molecules characterized by having a carbon chain fully saturated with hydrogen atoms, meaning they contain no double bonds between carbon atoms. These fats are typically solid at room temperature and are commonly found in animal products and certain tropical oils. While historically viewed as universally detrimental, current nutritional endocrinology recognizes that the metabolic effects of different SFAs vary based on chain length and dietary context. However, excessive intake is generally associated with increased low-density lipoprotein (LDL) cholesterol and potential systemic inflammation.
