Meaning

Polysorbates are non-ionic surfactants and emulsifiers derived from polyethoxylated sorbitan and fatty acids, often identified as Polysorbate 20 or 80. These amphiphilic compounds reduce surface tension between disparate phases. Their structure facilitates dispersion of oily substances in water, forming stable emulsions or solubilizing insoluble compounds.
