Interfacial denaturation refers to the irreversible structural alteration of a protein when it encounters and adsorbs to an interface, such as the boundary between air and liquid, oil and water, or a solid surface. This process involves the unfolding of the protein’s native three-dimensional conformation, leading to a loss of its characteristic secondary and tertiary structures, often resulting in diminished biological function.
