Goitrogenic foods are specific dietary items that contain naturally occurring compounds capable of interfering with the normal function of the thyroid gland, primarily by inhibiting iodine uptake or thyroid hormone synthesis. These compounds are often found in certain raw cruciferous vegetables, such as broccoli, cabbage, and kale, as well as soy products. While moderate consumption is generally safe for individuals with adequate iodine status, excessive intake, particularly in cases of underlying iodine deficiency or thyroid dysfunction, can potentially lead to the enlargement of the thyroid gland, known as a goiter.
