Complex carbohydrates are polysaccharides, composed of long chains of monosaccharide units, primarily glucose, which are chemically linked together. Unlike simple sugars, their molecular structure requires extensive enzymatic hydrolysis during digestion, releasing glucose into the bloodstream at a gradual pace. This category includes starches, found in grains and legumes, and dietary fiber, which is largely indigestible.
