Advanced Glycation End-Products, commonly known as AGEs, represent a diverse group of compounds formed when reducing sugars, such as glucose, react non-enzymatically with proteins, lipids, or nucleic acids through a process called glycation. This spontaneous chemical reaction, also known as the Maillard reaction, creates stable, irreversible molecular structures that accumulate over time within biological tissues.
